Quinoa Black Bean Salad
Ingredients:
1 cup quinoa
1 can organic black beans
1 cup organic corn
1 red/yellow or orange bell pepper
1 bunch of cilantro
15 cherry tomatoes or whatever tomatoes are in season
1 clove garlic (optional)
1/4 of a red onion (optional)
Celtic sea salt or other quality salt to taste
2 tablespoons of high quality olive oil

Directions:
1. Make quinoa (in rice cooker) or boil 2 cups water, add 1 cup quinoa, cover and simmer for 20 minutes.
2. Chop all vegetable ingredients.
3. Stir vegetables and black beans into quinoa add salt and olive oil.
4. Bless and enjoy!

I Love My Body Juice!
While preparing this life-loving food, I like to say my affirmations out loud:
 “I love myself so I take time to nourish myself with healthy food.”
 “I love myself so much that I slow down and prepare my family and myself the best food on earth.”
 “I love my life.”
 “I deserve amazing health.”
 “I love myself so much that I get to eat organic food.”
 “I love my body and I love Mother Earth.”
 “I am worth slowing down and preparing the best food on earth.”
 
Ingredients:
2 organic carrots
4 ribs organic celery
1 organic gala apple
3 handfuls organic spinach
1 handful sunflower sprouts
1 bit of organic ginger root

Directions:
Wash, chop and juice all veggies in your juicer while saying your “I love myself” affirmations. Pour juice into the BEST glass or wine glass you have. Bless your juice, give thanks and set an intention for how you want the juice to make you feel.

Notice how you feel all day long. Repeat the process again tomorrow.

Super Smoothie
Ingredients:
20 ounces of fresh organic apple juice
1 pint of berries (you choose, organic of course)
1 banana (try freezing it first)
2 teaspoons Spirulina or blue green algae
3 Tablespoons bee pollen
3 Tablespoons flax oil or coconut oil
1 Tablespoon lecithin
1/4 cup of freshly ground flax seed with a dash of cinnamon

Directions:
Fill blender half full (about 20 ounces) with apple juice. Grind flax seeds with cinnamon in coffee grinder and add to blender. Add all other ingredients and blend on low until the mixture is moving smoothly. Then blend on high for two minutes until creamy.

Why is this smoothie super?
Because it is a high protein meal having both Spirulina and bee pollen, which are two of the highest quality sources of protein on the planet! They both have very long chain of amino acids that break down easily to single amino acids.

Flax seeds and berries provide five different types of fiber: cellulose, hemicellulose, gums, lignin, and fruit fiber. The lecithin and flax seed oil combine to cause the production of high density lipoproteins that are essential to carrying fats back to the liver.

Yummy Smoothie Variations:
Add any one or all of these variations to your super smoothie!

Shredded coconut
Soaked dates, raisins, or currants
Chunks of apple, pear or peach
Mango or papaya
Peeled orange
Peeled and chopped ginger root

Avocado, Tomato and Basil Sandwich
Ezekiel bread is the healthiest bread you can buy. You can buy it in the freezer section of your health food store. It's a sprouted live grain bread and tastes delicious. After purchasing it, keep it in your fridge since it's a live bread and will spoil if kept at room temperature like other breads.

Ingredients:
1 slice Ezekiel bread
1/2 avocado
1 teaspoon olive oil
1 garden fresh organic tomato
5-6 basil leaves chopped up fine
pinch of Celtic sea salt

Directions:
Toast Ezekiel bread. Chop up avocado, tomato and basil. Drizzle veggie mixture with olive oil and sea salt. Spoon onto Ezekiel bread. Enjoy!

Tip: Make enough for a second serving.You can enjoy this for breakfast, lunch, as a snack or for dinner! You choose!

Roasted Winter Squash and Apple Soup
Adapted from Dr. Weil’s recipe book “The Healthy Kitchen”

Ingredients:
 1 large winter squash, seeded, and cut into 2-inch pieces
 2 medium onions, peeled and quartered
 3 cloves garlic, peeled 
 2 tart, firm apples, peeled, cored and quartered
 2 tablespoons extra virgin olive oil
 salt and chili powder to taste
 4-5 cups vegetable stock

Directions:
1. Preheat oven to 400 degrees F
2. In a large roasting pan, toss the squash, onions, garlic and apples with the oil to coat.
3. Season well with the salt and chili powder.
4. Roast, stirring every 10 minutes, until the vegetables are fork-tender and lightly browned, about 40 minutes.
5. Put half of the vegetables with 2 cups of the stock in a food processor (or Vitamix) and puree until smooth.
6. Repeat with the remaining vegetables and broth.
7. Return pureed mixture to the pot.
8. If the soup is too thick, add more broth.
9. Correct the seasoning and heat to a simmer.
10. Serve!

“Before starting the Cleanse I was addicted to sugar and my blood sugar levels were very out of whack. I finally have control of my binge eating. I can stop, think, and realize what I need to deal with on an emotional level so that I don't even need to go to food.
